Hi friends –
“What are we eating?” is the new “What’s for dinner?” in our house—because it’s never just about dinner. Our meals revolve around our daily schedules, and if we’re free at lunchtime, that often becomes our main meal.
So today, I thought I’d share a few of the recipes we’ve cooked and loved this week. I’ve included names, photos, and links for each one to make things easy if you want to try them out yourself.
Cauliflower Pasta (No Roasting, Just 10 Minutes!) Poverina Style
Just 6 ingredients including the salt and chili – you have to try it!
This recipe comes straight from my husband’s kitchen, passed down from his childhood. The name “Spicy Cauliflower Poverina Style” nods to its humble Italian roots. “Poverina” means “poor” in Italian—referring to dishes made with minimal ingredients during harder times.

Rolled Spinach Omelette
Have you ever had a recipe that looked so simple but had you on round three before it finally came together?
That was me with this rolled spinach omelette. What started as a quick breakfast idea turned into a mini lesson in patience, persistence, and trusting my gut (literally).
This story comes with a comforting, feel-good recipe that’s as beautiful as it is delicious—and yes, it finally worked. Let me tell you how it happened…
After two failed attempts, this rolled spinach omelette finally came together on try number three—with patience, hope, and a little kitchen chaos. The result? A perfectly tender, vibrant omelette that had my husband saying, “Wow.” 💚

Roasted Air Fryer Bell Peppers
Yes, air fryer recipes cut down cooking time—but let’s be honest, they’ve also humbled many a home cook (even the pros, I think). We’re BIG lovers of roasted bell peppers, and once we started doing them in the air fryer, it felt almost silly to turn the oven on.

So now you’ve got your roasted peppers - then what?
Soak them in olive oil once peeled and eat them just like that, or turn them into a Roasted Red Pepper Dip. Serve it with couscous, maybe add some chicken? Oh boy, it’s so good…
Moroccan Couscous with Moroccan Spiced Chicken
